  • 1 1/2 cups raw unsalted walnuts
  • 1/2 cup pumpkin seeds
  • 6 cups salad greens
  • 2 cups frisée leaves
  • 12 diced apples or pears
  • 2 sliced avocados
  • 2 cups pomegranate seeds
  • 1/3 cup virgin olive oil
  • 1/4 cup balsamic vinegar or apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 tablespoons honey
  • Zest of orange and juice from one orange
  • Salt and black pepper to taste
  • Chipotle powder

Instructions

  1. Toast walnuts and pumpkin seeds in a dry skillet over medium heat for 5–7 minutes until golden brown. Let cool.
  2. In a bowl, whisk together olive oil, vinegar, mustard, honey, orange zest, orange juice, salt, black pepper, and chipotle powder.
  3. In a salad bowl, layer greens, frisée leaves, diced fruits, sliced avocados, toasted nuts, and pomegranate seeds.
  4. Drizzle dressing over the salad just before serving and toss gently to combine.
