  • 12 tablespoons avocado oil
  • Salt and pepper to taste
  • 1 large bell pepper, chopped into bite-sized pieces
  • 1/2 small onion, chopped into bite-sized pieces
  • 1/2 medium orange, thinly sliced with seeds removed
  • 1 cup orange juice
  • 2 tablespoons orange marmalade
  • 1/2 cup white sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • Fresh green onions for garnish

Instructions

  1. Prepare ingredients by chopping the bell pepper and onion, and slicing half an orange.
  2. In a skillet, heat avocado oil over medium heat. Sauté chopped vegetables until softened (about 3-4 minutes).
  3. Add chicken thighs to the skillet, season with salt and pepper, and cook until browned on both sides (about 5-7 minutes). Ensure chicken is cooked through (internal temperature of 165°F).
  4. In a bowl, mix orange juice, orange marmalade, sugar, soy sauce, rice vinegar, ginger, garlic, and red pepper flakes.
  5. Pour the sauce over the chicken in the skillet and stir to coat evenly. Simmer for another 5-7 minutes until the sauce thickens slightly.
  6. Serve hot over rice or noodles and garnish with sliced green onions.
