  • 1 cup jasmine rice
  • 1 ½ cups water
  • 1 teaspoon salt
  • 1 cup fresh pineapple, diced
  • ½ cup fresh basil leaves, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce

Instructions

  1. Rinse jasmine rice under cold water until clear. In a pot, combine rice, water, and salt; bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes.
  2. In a skillet over medium-high heat, add olive oil and shrimp. Sprinkle with jerk seasoning and lime juice; cook for 2-3 minutes on each side until pink and opaque.
  3. Fluff the cooked rice with a fork, then mix in diced pineapple, chopped basil, additional lime juice, and soy sauce until combined.
  4. Serve the rice mixture topped with jerk shrimp; garnish with extra basil if desired.
