  • 2 cups shredded rotisserie chicken
  • 1/4 lb. diced turkey slices
  • 1/4 lb. diced turkey pepperoni
  • 1/4 cup diced provolone cheese
  • 1/4 cup crumbled feta cheese
  • 2/3 cup diced grape tomatoes
  • 1/3 cup mild banana peppers
  • 1/2 thinly sliced red onion
  • 1/2 cup mayonnaise
  • 1/4 cup grated parmesan cheese
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon banana pepper juice (to taste)
  • 1 tsp oregano
  • 1 tsp garlic powder
  • Freshly cracked pepper and salt to taste

Instructions

  1. In a bowl, whisk together all dressing ingredients until smooth. Adjust seasoning as needed.
  2. In a large mixing bowl, combine shredded chicken, turkey slices, turkey pepperoni, red onion, tomatoes, banana peppers, and cheeses.
  3. Pour most of the dressing over the salad mixture and toss gently until well coated. Add more dressing if desired.
  4. Store in an airtight container in the refrigerator for up to four days.
