  • 2 large eggs

  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 2 cups powdered sugar, sifted
  • 34 tablespoons milk or cream
  • 1 teaspoon vanilla extract (for icing)
  • Pinch of salt (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it or lining it with parchment paper.
  2. In a mixing bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Add eggs one at a time and mix well after each addition. Stir in vanilla extract.
  3. In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually mix this into the wet ingredients until just combined.
  4. Gently fold in old-fashioned rolled oats until evenly distributed.
  5. Pour the batter into the prepared pan and bake for 25–30 minutes or until golden brown. Allow cooling completely before icing.
  6. For the icing, whisk together powdered sugar, milk or cream, vanilla extract, and a pinch of salt until smooth; adjust consistency as needed.
