  • 2 cups semi-sweet chocolate chips (divided)
  • 1 1/2 cups milk chocolate chips
  • 3 tablespoons butter
  • 14 ounces sweetened condensed milk
  • 4 packages of hot chocolate mix (1/2 cup)
  • 2 teaspoons vanilla
  • 4 cups vegan marshmallows (divided)
  • Peppermint candy canes or crushed peppermints (for garnish)

Instructions

  1. Prepare an 8×8-inch pan by lining it with foil or parchment paper and spraying lightly with cooking spray.
  2. In a double boiler, melt together 1 cup semi-sweet chocolate chips, milk chocolate chips, butter, sweetened condensed milk, and hot chocolate mix over medium heat until smooth.
  3. Stir in 2 cups of vegan marshmallows until softened.
  4. Remove from heat and mix in vanilla extract.
  5. Pour the fudge mixture into the prepared pan and press remaining marshmallows into the top.
  6. Refrigerate for about four hours until set.
  7. Drizzle melted remaining chocolate over the chilled fudge before serving.
