  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, minced
  • Olive oil (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, chopped spinach, Parmesan cheese, basil, parsley, and minced garlic until well mixed.
  3. Place each chicken breast between two pieces of plastic wrap and pound them to about 1/2 inch thick.
  4. Season both sides of the chicken with salt and pepper. Spoon an even layer of the ricotta mixture onto one side of each breast and roll tightly from the filled side.
  5. Place the rolls seam-side down in a baking dish; drizzle with olive oil if desired.
