Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add eggs and vanilla extract; mix until just combined. Press two-thirds of the mixture into the bottom of the prepared pan.
  4. In another bowl, combine diced peaches with cornstarch and brown sugar; spread evenly over the crust.
  5. Crumble remaining dough over the peach filling.
  6. Bake for 35 minutes or until golden brown on top.
  7. Let cool completely before lifting out using parchment paper; cut into squares.
