  • 6 1/4 cups bread flour
  • 2 teaspoons instant dry yeast
  • 2 cups warm water (105°F – 115°F)
  • 1 tablespoon granulated sugar
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 4 teaspoons fine sea salt
  • 7 ounces gruyère cheese (sliced)
  • 2 tablespoons fresh thyme leaves
  • Maldon sea salt flakes (for topping)

Instructions

  1. In a stand mixer bowl, combine warm water and sugar; sprinkle yeast on top and let sit until bubbly (5-10 minutes). Gradually mix in flour and salt, kneading for about 8–10 minutes until smooth.
  2. Transfer dough to an oiled bowl, cover, and let rise until doubled (1–2 hours).
  3. Gently punch down dough, transfer to an oiled baking sheet, and stretch it to fill the pan. Cover again and allow a second rise (30 minutes).
  4. Preheat oven to 400°F (200°C). Dimple the dough with your fingers, drizzle with olive oil, top with cheese cubes, thyme leaves, and Maldon sea salt.
  5. Bake for about 50 minutes or until golden brown. Cool slightly before slicing.
