  • 2 medium zucchinis (about 2 lbs), sliced into 1/2" rounds
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 lb lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 (28 oz) can diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Prepare the zucchini by slicing it into rounds and salting it to draw out moisture. Let sit in a colander for 15 minutes.
  2. Rinse the zucchini slices under cold water and pat dry with paper towels.
  3. Heat olive oil in a skillet over medium-high heat, add diced onions and cook until softened. Add minced garlic and sauté until fragrant.
  4. Brown the ground beef in the skillet until fully cooked, about 5 minutes.
  5. Stir in drained diced tomatoes, Italian seasoning, salt, and pepper; remove from heat.
  6. Preheat oven to 350°F. Layer half of the beef mixture into an 8×8-inch baking dish, followed by half of the zucchini and half of the mozzarella cheese; repeat layers.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
  8. Allow to cool for 10 minutes before slicing.
