  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Optional toppings: sour cream, shredded lettuce, chopped tomatoes

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with diced onions for about 5-7 minutes until onions are translucent. Stir in minced garlic, cumin, and chili powder; sauté for another minute.
  3. Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  4. Pour enchilada sauce over the rolled tortillas and sprinkle generously with shredded cheese.
  5. Bake uncovered for 20-25 minutes until bubbly and golden brown.
