  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 1/2 cup unsalted butter (softened) for frosting
  • 4 ounces cream cheese
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract for frosting
  • 1/4 teaspoon salt for frosting
  • 1 tablespoon whipping cream (if needed) for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together flour, ginger powder, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, cream together softened butter, brown sugar, granulated sugar, molasses, vanilla extract, and egg until smooth.
  4. Gradually blend in the dry ingredients then fold in rolled oats.
  5. Drop spoonfuls of dough onto the prepared baking sheet about 2 inches apart. Bake for 9 minutes until edges are golden but centers remain soft.
  6. For the frosting, beat together softened butter and cream cheese until smooth. Gradually add powdered sugar until desired sweetness is reached.
  7. Once cookies cool completely, spread frosting on the flat side of half the cookies and sandwich with another cookie.
