Gingerbread macarons are a delightful fusion of the classic holiday flavors of gingerbread cookies and the delicate elegance of French macarons.   • 137 grams super fine almond flour
  • 117 grams confectioners' sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 100 grams egg whites (about 3 large)
  • 110 grams super fine white sugar
  • 57 grams white chocolate (melted)
  • 1/2 cup unsalted butter (softened)
  • 1 tablespoon fancy molasses

Instructions

  1. Preheat oven to 150°C (300°F) and line baking sheets with parchment paper.
  2. Whip room temperature egg whites until frothy, then gradually add super fine white sugar until stiff peaks form.
  3. Sift together almond flour, confectioners' sugar, cinnamon, ground ginger, and ground cloves in a separate bowl.
  4. Gently fold dry ingredients into whipped egg whites until the mixture flows like lava.
  5. Pipe small circles onto prepared sheets and let rest for 30-60 minutes until a skin forms.
  6. Bake for about 20 minutes until set but not discolored; cool completely before filling with molasses buttercream made from creaming softened butter with confectioners' sugar, melted white chocolate, and molasses.
