  • 3 tbsp granulated sugar
  • 1/2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1/3 cup unsulphured molasses
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground allspice
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 tsp baking soda

Instructions

  1. Prepare the cheesecake filling by beating cold cream cheese with granulated sugar and vanilla until smooth; refrigerate.
  2. In a separate bowl, cream together softened butter and light brown sugar until fluffy. Add egg yolks one at a time, mixing well after each addition. Stir in molasses and vanilla.
  3. In another bowl, whisk dry ingredients: flour, baking soda, salt, and spices. Gradually combine with wet mixture until just mixed.
  4. Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  5. Scoop dough portions and flatten slightly; add a teaspoon of cheesecake filling in the center before sealing the dough around it.
  6. Roll cookie balls in spiced sugar mix before placing on baking sheets.
  7. Bake for about 11 minutes until edges are lightly browned but centers remain soft.
