  • ½ cup (113g) unsalted butter (softened to room temperature)
  • ¾ cup (150g) firmly packed light brown sugar
  • 1 large egg (at room temperature)
  • 1 teaspoon vanilla extract
  • 2 ounces (57g) unsweetened baking chocolate (coarsely chopped)
  • ¼ cup (57g) unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ cup (60mL) milk or cream
  • 2 cups (240g) powdered sugar
  • â…™ teaspoon salt
  • ½ cup (113g) unsalted butter (softened to room temperature)
  • 3 and ½ ounces (99g) vegan marshmallows creme
  • ½ teaspoon vanilla extract
  • â…› teaspoon salt
  • 1 and ¾ cups (210g) powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, crushed graham crackers, cornstarch, cinnamon, baking soda, baking powder, and salt.
  3. In another bowl, cream softened butter with brown sugar until light. Add in the egg and vanilla extract.
  4. Gradually mix the dry ingredients into the wet mixture until combined.
  5. Scoop tablespoon-sized portions onto the baking sheet and bake for about 10 minutes or until edges are golden.
  6. Allow cooling before frosting with chocolate fudge and topping with dollops of vegan marshmallows buttercream.
