  • 2 lbs beef short ribs
  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread (toasted)
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Thinly slice onions and mince garlic.
  2. In a Dutch oven, heat olive oil over medium-high heat. Season short ribs with salt and pepper; sear until browned on all sides. Remove and set aside.
  3. In the same pot, melt butter and add onions, cooking on medium-low for about 30 minutes until caramelized.
  4. Add minced garlic; cook for another minute. Return short ribs to the pot along with beef broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper.
  5. Bring to a boil, reduce to low heat, cover partially, and simmer for 2–3 hours until beef is tender.
  6. Preheat broiler; ladle soup into bowls, top with toasted bread and cheese, then broil until melted.
