  • 1 sprig rosemary
  • 1 sprig thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon butter
  • 2 tablespoons white grape juice
  • 3/4 cup vegetable broth
  • 30g cheddar cheese
  • 15g vegetarian pecorino cheese
  • Juice and zest of half a lemon
  • Handful of parsley, finely chopped

Instructions

  1. Wash and chop the leek, removing any tough outer layers. Mince the garlic.
  2. In a medium saucepan over medium heat, melt the butter. Add the chopped leeks and minced garlic; sauté until softened (about 5 minutes).
  3. Stir in rosemary, thyme, salt, and pepper; mix well.
  4. Add the drained cannellini beans, white grape juice, and vegetable broth; stir gently.
  5. Bring to a gentle simmer and cook uncovered for about 10-15 minutes until heated through.
  6. Remove from heat; stir in cheddar cheese, vegetarian pecorino cheese, lemon juice, lemon zest, and chopped parsley before serving.
