  • 6 garlic cloves, crushed or minced
  • 2 fresh thyme sprigs
  • 1/2 cup premium pomegranate juice
  • 2 Tbsps extra virgin olive oil
  • 1 tsp sea salt
  • 1 cup premium pomegranate juice (for sauce)
  • 2 Tbsps unsalted butter
  • 1 Tbsp cornstarch + 3 Tbsps warm water
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried parsley

Instructions

  1. Marinate the lamb chops by combining olive oil, garlic, thyme, sea salt, black pepper, garlic powder, and parsley in a bowl. Rub the mixture over the chops and let them marinate for at least 30 minutes.
  2. Preheat a cast iron skillet over medium-high heat. Sear the marinated lamb chops for about 4 minutes per side until golden brown.
  3. In another saucepan, combine 1 cup of pomegranate juice with unsalted butter over medium heat. Mix cornstarch with warm water until smooth; add to the saucepan and simmer until thickened.
  4. Transfer the skillet to an oven preheated to 375°F (190°C) and bake for about 15 minutes or until desired doneness is reached.
  5. Plate the lamb chops drizzled with pomegranate sauce and garnish as desired before serving.
