  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1/2 cup chopped cherries (fresh or jarred)
  • 2 tablespoons cherry juice (optional)
  • 1/2 cup heavy cream (for ganache)
  • 4 ounces dark or semi-sweet chocolate, chopped
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, beat eggs and sugar until fluffy, then add vanilla extract.
  3. Sift together flour, cocoa powder, baking powder, and salt; fold into the egg mixture.
  4. Spread batter in the pan and bake for about 10 minutes until it springs back when touched.
  5. While warm, roll the cake in a powdered sugar-dusted towel and let it cool completely.

  7. Unroll the cooled cake, spread filling evenly, then re-roll without the towel.
