  • 1 1/4 cups (163g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 3/4 tsp nutmeg
  • 1/4 tsp salt
  • 6 tbsp (84g) unsalted butter, room temperature
  • 3/4 cups (155g) sugar
  • 1 1/2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup + 2 tbsp (150ml) eggnog
  • 1/2 cup (115g) unsalted butter
  • 1/2 cup (95g) shortening
  • 4 cups (480g) powdered sugar
  • 4 tbsp (60ml) eggnog
  • 1/4 tsp vanilla extract (alcohol-free), optional
  • 1 tsp nutmeg
  • pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, nutmeg, and salt.
  3. In another bowl, beat unsalted butter and sugar until creamy. Mix in vegetable oil.
  4. Add eggs one at a time followed by vanilla extract; mix until combined.
  5. Gradually incorporate dry ingredients alternating with eggnog until just combined.
  6. Fill cupcake liners with batter and bake for about 18 minutes or until a toothpick comes out clean.
  7. Cool cupcakes for 5 minutes in the pan before transferring to a cooling rack.
  8. For frosting, beat together unsalted butter and shortening; gradually add powdered sugar and eggnog until smooth.
  9. Frost cooled cupcakes and sprinkle with nutmeg as desired.
