  • 12 to 18 pound turkey (fully thawed)
  • 1 onion (peeled and quartered)
  • 1 lemon (quartered)
  • 1 to 2 sprigs fresh rosemary
  • 1 to 2 sprigs fresh thyme
  • 1 to 2 sprigs fresh sage
  • kosher salt and black pepper
  • ¾ cup unsalted butter (room temperature)
  • 6 cloves garlic (minced)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon finely chopped fresh thyme
  • 3 celery ribs (roughly chopped)
  • 2 carrots (roughly chopped)

Instructions

  1. Bring the turkey to room temperature by removing it from the fridge one hour before roasting.
  2. Preheat your oven to 325°F (160°C) and remove giblets.
  3. Pat the turkey dry and season the cavity with salt and pepper. Fill with onion, lemon, and fresh herbs.
  4. In a bowl, mix softened butter with garlic, salt, pepper, rosemary, and thyme until combined.
  5. Rub one-third of the herb butter under the skin of the turkey breast; spread the remaining butter all over the outside.
  6. Place the turkey on a roasting rack or atop chopped vegetables in a pan. Tuck wing tips under.
  7. Roast for approximately 15 minutes per pound or until an internal temperature of 158°-160°F is reached.
  8. Let the turkey rest for about 30 minutes before carving to allow juices to redistribute.
