  • 1/2 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 5 cups cubed sweet potatoes
  • 3 garlic cloves
  • 1 pound turkey sausage
  • 10 eggs
  • 1/2 cup plant-based milk (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat avocado oil over medium heat. Sauté chopped onion and bell pepper until soft; add minced garlic.
  3. Add turkey sausage to the skillet and cook until browned.
  4. Whisk together eggs, milk, thyme, salt, and pepper in a large mixing bowl.
