  • 4 cod fillets (56 oz each)
  • ¼ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1½ tsp fresh grated ginger
  • 2 cloves garlic (minced)

Instructions

  1. In a mixing bowl, whisk together the soy sauce, sesame oil, honey or maple syrup, rice vinegar, garlic, and ginger to create the marinade.
  2. Place cod fillets in a shallow dish and pour the marinade over them. Let sit for 15–30 minutes.
  3. To bake: Preheat oven to 400°F. Place marinated cod on a parchment-lined baking dish and bake for 12–15 minutes until the fish flakes easily.
  4. To pan-sear: Heat oil in a skillet over medium heat and cook cod for 3–4 minutes per side, spooning extra marinade over as it cooks.
  5. Optional: Simmer remaining marinade with cornstarch slurry in a saucepan until thickened for a glaze.
