  • 3 cups sliced shiitake or cremini mushrooms
  • 2 teaspoons dried thyme
  • 2 chopped garlic cloves
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • Kosher salt and pepper to taste
  • 1/4 cup plain flour
  • 2 cups milk
  • 2 cups white grape juice or chicken broth
  • 1 cup shredded mozzarella cheese
  • 3/4 cup grated parmesan cheese
  • 1 pound large pasta shells
  • 2 cups ricotta cheese
  • 2 cups shredded provolone cheese
  • 2 packages frozen spinach (10 ounces each)

Instructions

  1. Prepare the Sauce: In a saucepan, melt butter over medium heat. Add mushrooms and cook until tender. Stir in garlic, thyme, basil, oregano, salt, and pepper for about 2 minutes. Sprinkle in flour, stirring to create a roux before gradually whisking in milk and grape juice (or broth). Cook until thickened.
  2. Cook the Pasta: Boil salted water in a large pot and cook the pasta shells according to package instructions until al dente. Drain and set aside.
  3. Prepare the Filling: In a mixing bowl, combine ricotta cheese, mozzarella, provolone cheese, spinach, salt, and pepper. Mix until well combined.
  4. Assemble: Preheat the oven to 350°F (175°C). Spread half of the sauce in a baking dish. Stuff each pasta shell with filling and place seam-side up in the dish. Pour remaining sauce over top.
  5. Bake: Cover with foil and bake for about 30 minutes until heated through. Remove foil during the last 10 minutes for browning.
