  • 1 cup salted butter (room temperature)
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend freeze-dried strawberries into a fine powder using a blender.
  3. In a mixing bowl, cream together room-temperature butter, sugar, and vanilla until fluffy. Add egg and mix well.
  4. Gradually add flour, baking soda, part of the strawberry powder, and salt. Mix until combined; stir in strawberry jam.
  5. Roll dough into 1-inch balls and place on the baking sheet with space in between.
  6. Bake for about 8 minutes; lightly tap to flatten and return to the oven for an additional 2–3 minutes until golden around edges.
  7. For icing, mix cream cheese, powdered sugar, hot milk, vanilla extract, and remaining strawberry powder until smooth.
  8. Once cooled, dip cookies in icing or drizzle on top.
