Ingredients

Scale
  • 810 wooden skewers (soaked in water for 30 minutes)
  • 1 ½ pounds boneless skinless chicken breasts (cut into 1-inch cubes)
  • 2 cups dill pickle juice
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 1 cup dill pickle ranch dressing (divided, plus more for dipping)
  • Fresh dill (chopped for garnish)

Instructions

  1. Marinate the chicken: In a large bowl, combine chicken pieces with dill pickle juice. Cover and refrigerate overnight or for at least 8 hours.
  2. Season the chicken: In another bowl, whisk together kosher salt, black pepper, garlic powder, onion powder, and paprika. Toss the marinated chicken in the seasoning until well coated.
  3. Assemble the skewers: Thread the seasoned chicken onto soaked wooden skewers.
  4. Apply dressing: Brush half of the dill pickle ranch dressing over the skewered chicken pieces; reserve the rest for later.
  5. Preheat air fryer to 400°F: Lightly spray the basket with nonstick spray.
  6. Cook the skewers: Place them in a single layer in the air fryer basket and cook for about 11-12 minutes, flipping halfway through until they reach an internal temperature of 165°F.
  7. Final touches: Brush remaining reserved dressing over cooked skewers and garnish with fresh chopped dill before serving.
