  • 1/2 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1/4 cup olive oil
  • 1 tablespoon minced garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh cilantro for garnish

Instructions

  1. In a medium bowl, whisk together lime juice, orange juice, olive oil, minced garlic, cumin, oregano, salt, black pepper, and crushed red pepper flakes (if using).
  2. Place chicken thighs in a resealable bag or shallow dish; pour the marinade over the chicken. Seal and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat your oven to 400°F (200°C).
  4. Remove chicken from marinade and place skin-side up on a parchment-lined baking sheet; discard leftover marinade.
  5. Roast the chicken for 35-40 minutes until the skin is crispy and internal temperature reaches 165°F (75°C).
