  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1 tsp vanilla extract
  • 1/3 cup coconut cream (as a substitute for heavy cream)
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth. Add the egg and vanilla extract; mix until combined.
  3. In another bowl, whisk flour, salt, and baking powder together. Gradually incorporate into the wet mixture until just combined.
  4. Scoop equal portions of dough onto the baking sheet. Flatten slightly and create an indentation in each cookie for the filling.
