Crispy Smashed Carrots are an irresistible side dish that brings a delightful crunch and rich flavor to any meal. These golden, caramelized carrots are boiled until tender, then smashed and roasted to perfection with a savory garlic and Parmesan blend.

  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil the carrot rounds in salted water for 10–12 minutes until fork-tender. Drain and let cool slightly.
  3. Place the boiled carrots on the baking sheet and gently smash each round using the bottom of a glass or measuring cup.
  4. Drizzle olive oil over the smashed carrots, then season with garlic powder, smoked paprika, salt, pepper, and sprinkle grated Parmesan on top.
  5. Roast in the oven for 20–25 minutes, flipping halfway through until golden brown and crispy.
  6. Garnish with chopped parsley before serving.
