  • 2 tbsp lemon juice
  • 2 romaine hearts, chopped
  • 2 French baguettes
  • Panko and breadcrumbs for coating
  • ¼ cup Parmesan cheese (freshly grated)
  • 2 garlic cloves (minced)
  • ¼ tsp black pepper
  • Pinch sea salt
  • â…“ cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder

Instructions

  1. Prepare the dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, lemon juice, minced garlic, black pepper, sea salt, and grated Parmesan until smooth. Reserve some for assembly.
  2. Pound chicken cutlets to even thickness and season with salt and pepper.
  3. Set up a breading station with flour mixed with salt and smoked paprika, whisked eggs with salt, and a mix of panko crumbs, breadcrumbs, herbs, and Parmesan.
  4. Dredge each cutlet in flour, dip in egg wash, then coat with breadcrumb mixture.
  5. Fry the chicken in hot oil until golden brown on both sides (about 4–5 minutes per side). Drain on a wire rack.
  6. Slice baguettes open lengthwise and spread reserved dressing inside. Layer with crispy chicken and Caesar salad before serving immediately.
