  • 800g russet potatoes
  • 12 tbsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika powder
  • ½ tsp smoked paprika powder
  • ½ tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • ⅛¼ tsp chipotle powder (optional)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Wash and peel the potatoes (optional). Dice into even-sized pieces and dry thoroughly with paper towels.
  3. Spread the diced potatoes on a large baking sheet. Drizzle with avocado oil and toss to coat evenly.
  4. In a bowl, mix garlic powder, onion powder, paprika, smoked paprika, thyme, oregano, salt, pepper, and chipotle powder if using. Sprinkle over the potatoes and toss again until well-coated.
  5. Roast in the oven for about 15 minutes; toss halfway through cooking for even crispness. If using a broiler, broil for an additional 10 minutes until golden brown.
