  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/3 cup basil pesto
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 cup cherry tomatoes, halved
  • Fresh basil leaves, for garnish

Instructions

  1. Season the chicken breasts with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5-6 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic for about 1 minute until fragrant. Reduce heat to medium and add heavy cream, basil pesto, and Parmesan cheese. Simmer for 2-3 minutes until slightly thickened.
  4. Return the chicken to the skillet and spoon the sauce over it. If desired, add halved cherry tomatoes and simmer for another 2-3 minutes.
  5. Garnish with fresh basil leaves before serving hot.
