  • Rotini or penne pasta
  • Boneless skinless chicken breasts
  • Fresh broccoli florets
  • Pesto sauce (store-bought or homemade)
  • Cream cheese
  • Grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. Cook the rotini or penne pasta in salted boiling water until al dente. Drain and set aside.
  3. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken for about 6-7 minutes per side until fully cooked. Chop into bite-sized pieces.
  4. In a mixing bowl, combine the cooked pasta, chopped chicken, fresh broccoli florets, pesto sauce, cream cheese, half of the grated Parmesan cheese, salt, and pepper. Mix until well combined.
  5. Pour the mixture into the greased baking dish and sprinkle with the remaining Parmesan cheese.
  6. Bake for 25-30 minutes or until bubbly and golden on top.
