  • 2 tbsp olive oil (for searing)
  • 2 tbsp butter
  • 8 oz mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley (chopped)

Instructions

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, egg, grated Parmesan cheese, minced garlic, salt, black pepper, and dried thyme. Mix until just combined.
  2. Form small meatballs (about 1 inch in diameter) from the mixture.
  3. Heat olive oil in a skillet over medium heat. Cook the meatballs for 6–8 minutes until browned on all sides, then remove them from the skillet.
  4. In the same skillet, melt butter and sauté sliced mushrooms and minced garlic until golden brown.
  5. Stir in heavy cream and chicken broth; bring to a simmer.
  6. Return the meatballs to the skillet and simmer for an additional 5–7 minutes until cooked through and sauce thickens slightly.
