  • 1 ½ lbs shrimp (peeled and deveined)
  • 4 Tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ¾ cup heavy cream
  • 3 cups cooked jasmine or basmati rice
  • ⅓ cup fresh parsley (finely chopped)
  • 2 Tbsp fresh dill (chopped, optional)
  • 1 Tbsp olive oil
  • 2 Tbsp lemon juice (fresh)
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper (freshly ground)

Instructions

  1. In a bowl, mix cooked rice with parsley, dill, salt, and olive oil; keep warm.
  2. In a large skillet over medium heat, melt 2 Tbsp butter and oil. Add minced garlic and cook until fragrant.
  3. Season shrimp with salt and pepper; cook in skillet until pink and opaque. Remove from skillet.
  4. Reduce heat; melt remaining butter, then stir in heavy cream and simmer until thickened.
  5. Add shrimp back to skillet; mix well with sauce along with remaining herbs and lemon juice.
  6. Serve shrimp over herb rice, drizzled with cream sauce.
