Creamy Chicken Bowls with Feta Sauce are a delightful blend of tender chicken, fresh vegetables, and a rich, tangy feta sauce. This dish is perfect for busy weeknights or meal prep, offering a satisfying balance of flavors and nutrients.

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • 2–3 tablespoons olive oil
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley or dill, chopped
  • 1/4 cup Kalamata olives (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season cubed chicken with smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
  3. Add the seasoned chicken to the skillet and cook until golden brown and cooked through (about 7-8 minutes). Stir occasionally.
  4. In a mixing bowl, combine crumbled feta cheese, Greek yogurt, lemon juice, minced garlic, olive oil, salt, and pepper. Mix until smooth.
  5. Assemble bowls by starting with a base of cooked rice or quinoa in each bowl.
  6. Top with the cooked chicken pieces.
  7. Add halved cherry tomatoes, diced cucumber, sliced red onion, and chopped herbs.
  8. Drizzle generously with creamy feta sauce. Garnish with Kalamata olives if desired.
