  • 1 head cauliflower, chopped into florets
  • 1 bulb garlic, roasted
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap the whole bulb of garlic in aluminum foil with olive oil and roast for about 30 minutes until soft.
  2. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in cauliflower florets and cook an additional 5 minutes.
  3. Squeeze the roasted garlic into the pot. Add vegetable broth, bring to a boil, then simmer until cauliflower is tender (approximately 20 minutes).
  4. Blend the soup until smooth using an immersion blender or regular blender in batches. Return to low heat.
  5. Stir in milk or cream, then gradually add shredded cheddar while stirring until melted. Season with salt and pepper.
  6. Serve hot, garnished with fresh chives or parsley if desired.
