  • 23 tbsp fresh dill (chopped)
  • 1.5 tbsp fresh chives (chopped)
  • 12 tbsp red onion (finely diced)
  • 1 tsp lemon juice
  • 1 tsp garlic powder
  • 1/8 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)

Instructions

  1. Boil the eggs: Place eggs in a pot with cold water, bring to a boil, then let sit (covered) for 11-12 minutes.
  2. Ice bath: Transfer boiled eggs to an ice bath for at least 5 minutes before peeling.
  3. Prepare the eggs: Peel and dice the hard-boiled eggs.
  4. Blend cottage cheese until smooth.
  5. In a bowl, mix blended cottage cheese with Dijon mustard, dill, chives, red onion, lemon juice, garlic powder, salt, and pepper.
  6. Combine the egg mixture with the cottage cheese mixture and serve on whole grain bread or in lettuce wraps.
