  • 4 Cornish hens (1.25 to 1.5 pounds each)
  • 2 tablespoons unsalted butter
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/3 cup coarsely chopped pecans
  • 2 teaspoons fresh thyme
  • 1.5 cups cooked rice
  • 1/2 cup diced Fuji apples
  • 1/2 cup sweetened dried cranberries
  • 1 cup apple cider
  • 2 tablespoons maple syrup
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, melt butter over medium heat and sauté onions and celery until softened.
  3. Stir in pecans, thyme, cooked rice, apples, cranberries, salt, pepper, and a splash of apple cider until well combined.
  4. Rinse the hens under cold water and pat dry; rub melted butter over each hen and season with salt and pepper.
  5. Stuff each hen with the prepared rice mixture and place them in a roasting pan.
  6. Mix the glaze ingredients together and brush over the hens before roasting.
  7. Bake for approximately 80 minutes or until internal temperature reaches 165°F (74°C), basting occasionally.
