  • 2 tablespoons instant espresso powder

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon baking powder
  • 3/4 cup all-purpose flour
  • 3 tablespoons heavy cream
  • 1 1/2 teaspoons instant coffee granules
  • 1/4 cup unsalted butter, softened
  • 1/8 teaspoon salt
  • 1 3/4 cup powdered sugar
  • 1/2 cup dark chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F. Line an 8×8 baking pan with foil and spray with nonstick baking spray.
  2. In a mixing bowl, whisk melted butter with dark cocoa powder until smooth. In another bowl, beat sugar, eggs, instant espresso powder, and vanilla until fluffy. Combine both mixtures.
  3. In a separate bowl, mix salt, baking powder, and flour; gradually incorporate into the wet mixture.
  4. Pour the batter into the prepared pan and bake for 25–28 minutes until slightly sticky when tested with a toothpick. Let cool completely.
  5. For the frosting, dissolve instant coffee granules in heavy cream, then beat softened butter with salt until creamy before adding powdered sugar and coffee mixture.
  6. Frost cooled brownies and prepare the chocolate topping by melting dark chocolate chips with heavy cream; spread over frosted brownies.
  7. Allow to set before cutting into squares.
