  • 6-pound beef rib roast
  • 3 tablespoons kosher salt
  • 1 tablespoon coarse black pepper
  • 3 tablespoons olive oil
  • 3 pounds meaty beef bones
  • 6 cups low-sodium beef stock
  • ½ cup apple vinegar
  • 5 cloves garlic
  • 2 large carrots, chopped
  • 3 ribs celery, chopped
  • 1 large onion, chopped
  • 1 tablespoon tomato paste
  • 2 sprigs thyme
  • 1 large bay leaf
  • Salt and pepper, to taste
  • 1 cup sour cream
  • 5 tablespoons prepared horseradish
  • 1 tablespoon dijon mustard
  • 2 teaspoons plant-based Worcestershire sauce
  • 2 tablespoons mayonnaise

Instructions

  1. Allow the prime rib to reach room temperature by taking it out of the fridge an hour before cooking.
  2. Preheat the oven to 450°F (232°C).
  3. Rub the roast with olive oil and season generously with salt and pepper.
  4. In a roasting pan, layer meaty beef bones with chopped vegetables and aromatics. Pour in beef stock and apple vinegar.
  5. Place the seasoned prime rib on top of the vegetables in the roasting pan and insert a meat thermometer into the thickest part of the roast.
  6. Roast for about 20 minutes at high heat until browned, then reduce to 325°F (163°C) until desired doneness (135°F/57°C for medium-rare).
  7. Let it rest for 20 minutes before slicing.
  8. Mix sour cream with horseradish, dijon mustard, plant-based Worcestershire sauce, mayonnaise, salt, and pepper for a delicious sauce.
