  • 45 pound bone-in, skin-on turkey breast
  • 1/2 cup unsalted butter
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • 1 lemon, sliced
  • 1 orange, sliced
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 350°F (175°C). Rinse the turkey breast under cold water and pat it dry.
  2. In a mixing bowl, combine softened butter with lemon zest, orange zest, herbs, garlic, salt, and pepper until well mixed.
  3. Carefully lift the skin from the turkey breast and spread half of the herb butter mixture underneath. Rub the remaining mixture over the skin.
  4. Place quartered onion and citrus slices inside the cavity of the turkey to enhance flavor.
  5. Transfer to a roasting pan and pour chicken broth into the bottom. Roast for about 1 hour and 40 minutes or until it reaches an internal temperature of 165°F (74°C), basting occasionally.
  6. Let rest for 15 minutes before slicing.
