  • 1/4 cup packed light brown sugar
  • 1/4 cup granulated sugar (for streusel topping)
  • 1 teaspoon ground cinnamon (for streusel topping)
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, cinnamon, baking soda, salt, and nutmeg.
  3. In another bowl, mix granulated sugar, vegetable oil, eggs, and vanilla until smooth.
  4. Combine wet and dry ingredients gently; fold in grated zucchini and nuts if using.
  5. Pour batter into prepared pan.
  6. For the streusel topping: mix flour, brown sugar, granulated sugar, and cinnamon; cut in cold butter until crumbly.
  7. Sprinkle streusel over the batter and bake for 50–60 minutes or until a skewer comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
