  • 6 large egg whites
  • 350g caster sugar
  • 1 tsp white grape juice vinegar
  • 1 tsp cornflour
  • 600ml double cream
  • 1 tsp vanilla bean paste
  • 700g assorted fresh fruit
  • Mint leaves (for decoration)
  • Icing sugar (for dusting)

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Line a baking sheet with parchment paper, drawing two circles: one measuring 30cm and another 15cm in the center.
  3. In a mixing bowl, whip egg whites until soft peaks form.
  4. Gradually add sugar while whisking on high speed until stiff and glossy.
  5. Fold in a mixture of cornflour and vinegar gently.
  6. Spoon meringue onto the parchment circle, shaping it accordingly.
  7. Bake for 1 to 1 hour and 15 minutes; reduce temperature immediately after placing it in the oven.
  8. Whip cream with vanilla paste until barely stiff peaks form.
  9. Once cooled, spread whipped cream on meringue and top with fresh fruits.
  10. Garnish with mint leaves and dust with icing sugar before serving.
