  • 1 pie crust (homemade or store-bought)
  • 4 large eggs
  • ¾ cup granulated sugar
  • 1½ cups whole milk
  • 1 cup heavy cream
  • 1½ tsp ground cinnamon
  • 2 tsp pure vanilla extract
  • Pinch of salt
  • Optional: ¼ tsp ground nutmeg, 1 tsp orange zest for holiday flair

Instructions

  1. Preheat oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch dish. Line with parchment and fill with baking weights; bake for 15 minutes, then remove weights and parchment and bake for an additional 5 minutes until golden. Let cool slightly.
  2. In a saucepan, heat milk and cream with cinnamon and vanilla until steaming but do not boil. If using a cinnamon stick or vanilla bean, steep for 10 minutes before removing.
  3. In a bowl, whisk eggs, sugar, and salt until smooth.
  4. Gradually pour the hot milk mixture into the egg mixture while whisking constantly to temper. Strain through a fine-mesh sieve.
  5. Lower oven to 325°F (160°C) and pour custard into the pre-baked crust. Bake for 35–40 minutes until edges are set but center jiggles slightly.
  6. Cool at room temperature, then refrigerate for at least 2 hours before slicing.
