  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) Dutch-process cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla extract
  • 5 oz chocolate, chopped
  • 1/4 cup + 2 tbsp (90 ml) heavy cream
  • 1/4 cup (85 g) cherry preserves

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking powder, and sea salt; set aside.
  3. In another bowl, cream together softened butter, brown sugar, and granulated sugar until smooth.
  4. Add egg yolks and vanilla; mix until well combined.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Roll dough into 1-inch balls and place them on the baking sheet. Make an indentation in the center of each ball using your thumb.
  7. Bake for 10 minutes until edges are set but centers are soft.
  8. While cooling, prepare the ganache by melting chopped chocolate with heavy cream over medium heat until smooth.
  9. Fill each cookie's indentation with cherry preserves followed by warm ganache.
