  • 1/2 cup fresh pineapple juice
  • 2 tbsp chipotle peppers in adobo sauce, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • 1/2 tsp cumin
  • Salt and black pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup fresh pineapple, diced
  • 1/2 cup red onion, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • Lime wedges for serving

Instructions

  1. Prepare the marinade by mixing pineapple juice, chopped chipotle peppers, soy sauce, olive oil, lime juice, minced garlic, cumin, salt, and pepper in a bowl.
  2. Marinate the chicken in the mixture for at least 30 minutes or up to 2 hours in the refrigerator.
  3. Heat a grill pan over medium-high heat and cook the chicken for 6–7 minutes on each side until fully cooked (internal temperature 165°F/74°C).
  4. Let the chicken rest before slicing it into strips.
  5. Warm tortillas in a skillet until pliable.
  6. Assemble tacos by placing sliced chicken on each tortilla and topping with diced pineapple, red onion, cilantro, and avocado.
  7. Serve with lime wedges for added zest.
