  • 5 celery stalks, chopped
  • 1 cup wild rice
  • 3 cups chicken broth
  • 1 lb chicken breasts, cut into small pieces
  • 10 tbsp butter, divided
  • 1 tsp salt
  • ½ tsp poultry seasoning
  • 4 tbsp flour
  • 2 cups milk
  • Optional: 3-4 cups cubed sturdy bread

Instructions

  1. Preheat your oven to 350°F. In a large baking dish, combine onion, carrots, celery, wild rice, and chicken broth. Cover with foil and bake for 1 hour and 15 minutes.
  2. In a saucepan over medium heat, melt 4 tablespoons of butter. Stir in flour, salt, and poultry seasoning; cook for 1 minute. Gradually whisk in milk until smooth to create a creamy sauce.
  3. Melt the remaining butter and toss with cubed bread if using.
  4. Remove the baking dish from the oven, add raw chicken pieces and pour over the creamy sauce. Mix well and top with buttered bread cubes.
  5. Increase oven temperature to 450°F and bake uncovered for an additional 20-30 minutes until chicken is cooked through and bread is golden brown.
