  • 2 large boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 4 oz cream cheese, softened
  • 1 cup shredded Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 oz uncooked pasta (elbow macaroni or shells)
  • ½ cup shredded mozzarella cheese (optional)
  • Fresh parsley or basil, chopped (for garnish)
  • Red pepper flakes (optional, for garnish)

Instructions

  1. Place chicken breasts in the bottom of a crockpot and season with garlic, Italian seasoning, salt, and pepper.
  2. Pour chicken broth over chicken and cook on low for 4–5 hours until fully cooked.
  3. Shred the cooked chicken and return it to the crockpot.
  4. Stir in cream cheese and Parmesan until melted and creamy.
  5. Add uncooked pasta to the mixture, cover, and cook on high for 30–45 minutes until pasta is tender.
  6. Optionally top with mozzarella cheese and let it melt before garnishing with fresh herbs.
