  • 2 boneless skinless chicken breasts
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • 4 slices of sturdy bread (sourdough or ciabatta)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Olive oil for grilling

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook for 6–7 minutes per side until fully cooked. Let rest before slicing.
  2. Slice the avocado, red onion, and tomato. Prepare cheese slices.
  3. Spread mayonnaise and Dijon on each slice of bread. Layer chicken, avocado, cheese, red onion, and tomato on two slices; top with remaining bread mayo side down.
  4. Heat skillet over medium heat with a little olive oil. Grill sandwiches for 3–4 minutes per side until golden brown and cheese is melted.
  5. Remove from heat, let cool for one minute, slice in half, and serve warm.
